UMA Coleccion Cabernet Sauvignon
Varietal: 100% Cabernet Sauvignon
Viticulture & Vinification: The pergola-trained grapes are harvested then gently pressed at controlled temperatures to insure an intense fruity bouquet. Traditional fermentation follows for 10 days. A percentage of the wine is then aged in American and French oak barrels.
Tasting Notes: Bright ruby red with spicy aromas of black currants and pepper. Excellent body and structure with soft luscious tannins and a long finish.
Serving Suggestions: The perfect accompaniment to roasted meats and stew.
UMA Coleccion Cabernet Sauvignon 2008, Silver Medal Winner
Varietal: 100% Shiraz
Viticulture & Vinification: The drip irrigated Espalier trained grapevines are hand-harvested at the peak of ripeness. The grapes are then slowly macerated and fermented with constant pumping over of the juice to extract optimal flavor and color. The wine then rests for 2 months in tanks before bottling.
Tasting Notes: An intense, deep ruby red with rich aromas of red fruits, plums and cherries and a pleasant finish.
Serving Suggestions: An ideal accompaniment to roast beef, hearty stews or hard cheese.
